Winter Brussels Sprouts Salad

Serves: 6

• 1½lbs Brussels sprouts
• 3 Tbsp olive oil
• 1 tsp lemon juice
• 1 medium-sized apple
• 1/3 cup crushed walnuts
• 1/3 cup dried cranberries
• 1 tsp salt

Preparation: Preheat oven to 375° F. Clean all of the Brussels sprouts and pat dry. Cut into halves. Toss the Brussels sprouts with olive oil and salt. Lay them onto a non-stick baking tray and roast for 40 minutes or until the edges turn golden brown and crispy. Remove from the oven and let cool until warm. Slice your apple into thin pieces making sure not to go down to the core. Cut the larger slices with a knife lengthwise into bite-sized strips. In a large bowl, toss together all ingredients until evenly mixed. Serve warm or at room temperature. Adapted from dailyburn.com
