Tangerine, Radish, And Mint Salad

2 minneola tangerines
¼ red onion
1/8 cup fresh mint leaves
1 tbsp olive oil
1/8 tsp salt
Freshly ground black pepperPreparation:
Cut the top and bottom off of each tangerine. Stand the orange on 1 end on a cutting board and, following the curve of the fruit, cut away the skin and pith of the orange. Cut each orange section out of its pith. Thinly slice radishes and onions, and tear up mint leaves into small pieces. In a medium bowl toss together the tangerine sections, onion, radishes, and mint leaves. Drizzle with oil and season with salt and pepper. Adapted from FoodNetwork.com.
