Stir-fried Baby Bok Choy With Garlic

2 tbsp reduced-sodium chicken or veg. broth
½ tbsp low-sodium soy sauce
2/3 tsp cornstarch
1 ½ tbsp peanut or vegetable oil
4 cloves garlic, minced
1lb baby bok choy, cut in 2-inch strips
1 tsp Asian sesame oil
Heat wok or large frying pan over medium-high heat until a drop of water evaporates instantly. Meanwhile, stir together broth, soy sauce, cornstarch (to help sauce thicken, if you don’t have it on-hand, it isn’t essential), and pinch of salt until cornstarch has dissolved. Pour peanut oil down side of pan, then swirl oil, tilting to coat side. Add garlic and stir-fry until pale golden, 5 to 10 seconds. Add bok choy and stir-fry until leaves are bright green and limp, 2 to 3 minutes. Stir broth mixture, then pour into wok and stir-fry 15 seconds. Cover with lid and cook, stirring occasionally, until vegetables are crisp-tender, 2 to 4 minutes. Stir in sesame oil, then transfer to a serving dish. Gourmet, 2007.
