Ontario Green Beans With Almonds And Garlic

Serves: 3-4

• 3/4 lb green beans, trimmed
• 1 Tbsp unsalted butter
• 1/4 cup slivered almonds
• 1/2 tsp. minced garlic
• 1/2 Tbs fresh lemon juice
• 1 Tbsp sea salt

Preparation: Bring a pot of water to a boil. Add the beans and cook until bright green and barely crisp-tender, about 2 minutes. Drain and rinse under cold water until completely cool. Dry thoroughly. In a skillet, heat the butter and oil over medium-low heat until the butter melts and foam subsides. Add the almonds and cook, stirring occasionally, until golden-brown all over, about 3 minutes. Transfer the almonds to a plate. Reduce the heat to low and add the garlic to the skillet. Cook, stirring constantly, until fragrant, about 30 seconds. Add the beans, increase the heat to medium, and cook, tossing occasionally, until crisp-tender and lightly browned, 5 to 8 minutes. Stir in the lemon juice and season to taste Transfer to a serving platter, sprinkle with almonds, and serve. Adapted from finecooking.com
