Carrot Salad With A Hit Of Heat

Serves: 4

• 3 Tbsp extra-virgin olive oil
• 1 Tbsp fresh lemon juice
• 1 tsp ground fresh chile paste 4 cups coarsely grated carrot
• 3/8 tsp kosher salt
• 2 Tbsp chopped fresh cilantro
• 1 Tbsp minced fresh mint
• 1 Tbsp minced fresh chives (optional)

Preparation: Combine first 3 ingredients in a large bowl, stirring with a whisk. Add carrot and salt; toss to coat. Let stand for 30 minutes. Just before serving, add cilantro, mint, and chives, if desired; toss to combine. Adapted from myrecipes.com
