Baby Bok Choy With Sesame Dressing

½ cup light brown sugar
½ cup + 2 Tbsp olive oil, divided
¼ cup red wine vinegar
¼ cup toasted sesame seeds
2 Tbsp soy sauce
1 pkg. plain ramen noodles
¼ cup sliced almonds
5-6 bulbs baby bok choy, sliced
5 scallions, choppedPreparation:
In a small bowl or in a jar with a tight-fitting lid, combine brown sugar, ½ cup olive oil, vinegar, sesame seeds, and soy sauce. Allow flavors to blend while preparing the rest of the salad. Heat remaining 2 Tbsp olive oil in a large sauce pan over medium heat until shimmering. Crumble ramen noodles and add to pan along with the almonds; sauté until toasted, about 15 minutes, stirring frequently to avoid scorching. In a large bowl, toss baby bok choy and scallions together. Add crunchy mix and salad dressing to the baby bok choy and scallions and toss until combined. Serve at room temperature. Adapted from Culinary Hill, December 4, 2013.
