Made locally by hand, this beautiful cut fresh pasta is a very traditional type from the Emilia-Romagna and Marche regions of Italy. These long, flat ribbons pair well with a variety of sauces, but are most commonly paired with bolognese sauce. This classic pasta is so loved and respected that there's a solid gold replica of a piece of tagliatelle in a glass case in the Bologna Chamber of Commerce, demonstrating the correct dimensions of 1 millimeter by 6 millimeters.
