This cheese is un-pasturized/raw. As of 2008, un-pasturized cheeses can now be sold in Ontario (as long as they've been aged for at least 60 days). This process kills the bacteria and keeps the flavour that's lost in the pasteurization process!
The Old Organic Cheddar is less than one year old and offers some of the best value for any cheese. Rich and creamy, it has more taste then most 1-2 year (pasteurized) cheeses.
