These sunchokes are the root of a sunflower that is native to North America. Also known as Jerusalem Artiochokes, this knobby tuber looks a bit like ginger root. The Italian word for sunflower is girasole—which sounds a lot like the name of the biblical city. Cook Jerusalem Artichokes just like potatoes or parsnips—boiled, roasted, or fried. They also make a wonderful soup.
