Fennel has a unique shape, with a rounded bulb growing from the root, which grows into think hollow stalks, then green branches and feathery green foliage. All parts of the fennel plant are edible, including the seeds, but the most popular part is the bulb, which has a sweet liquorice flavour with citrus notes. Add it raw to salads and slaws, or roast it slowly with olive oil until its caramelized.
Marvellous Edibles Farm is a family run operation owned by Ayse Akoner, and Jens Eller since 2003. Certified Organic since 2009, they grow beautiful vegetables and often heirloom varieties - and attend several local Toronto markets (which is how we found them!). Their mostly heritage animal and bird breeds are pastured and roam freely. Located 2.5 hours north west of Toronto on the stunningly beautiful Niagara Escarpment, this is a century farm (1894), with the house and barn still standing. The Bruce Trail actually passes right through their farm! They are certified organic by Pro-Cert.
