Amaranth is an extremely nutrient rich green that is high in magnesium. They are found commonly across Asia, and some parts of Africa and the Carribean. These micro greens are bright red and are perfect tossed into salads or on top of any dish! When the leaves mature they are best cooked, and can be used in stir frys and curriees that call for spinach or swiss chard.
