1 mini Watermelon (or ½ a regular watermelon), sliced into triangles
For brushing Olive or coconut oil for brushing
2-3 Limes, juice only
2 Tbsp Honey
To taste Sea salt
1 handful Crushed walnuts (optional)
1 handful Mint leaves (optional)
Optional Garnish with fresh herbs such as basil
To make simply:
- Brush the watermelon triangles with olive oil. Grill on a hot grill just until charred. Do not overcook.
- Drizzle with lime juice and honey, sprinkle with sea salt. Garnish with fresh mint and walnuts if desired.
